Scrambled Eggs and Lox
This makes a wonderful breakfast or brunch item and is quick and easy to make.

olive oil or ghee
In a small bowl, beat the eggs.
In a medium saute pan, over medium-high heat, heat oil or ghee and saute the onion for 2 minutes, or until soft. Add in the beaten eggs and continue to stir until almost set, about 2 minutes.
Add in lox and stir for another minute, just enough to warm the lox. Adjust taste with salt and pepper, being mindful that the lox is already salty.
Can optionally sprinkle with fresh chopped chives.
